Quick, easy, yummy.  Thanks to <a href=\"\" target=_blank>The Gluttonous Vegan<\/a> for the inspiration:<\/p>\n<blockquote><p>Curry:<\/p>\n<ul>\n<li>a sweet potato, peeled and cubed<\/li>\n<li>tofu, cubed into small cubes<\/li>\n<li>a carrot, cut into wedges*<\/li>\n<li>3 green onions, thinly sliced<\/li>\n<li>2 white onions, roughly chopped<\/li>\n<li>6 large mushrooms, cut into 1\/8ths<\/li>\n<li>3 cloves of garlic, minced<\/li>\n<li>1 sachet (50g) coconut cream<\/li>\n<li>2 Tbsp green Thai curry paste<\/li>\n<li>1 Tbsp ginger paste<\/li>\n<li>2 tsp pepper flakes (to taste)<\/li>\n<li>vegetable stock<\/li>\n<li>basil leaves, shredded<\/li>\n<\/ul>\n<ol>\n<li>Saut\u00e9 your white onion and mushrooms until tender.<\/li>\n<li>Add curry paste and let it heat through a bit.<\/li>\n<li>Add stock plus everything else except the green onion and basil leaves.<\/li>\n<li>Let simmer for about 20 minutes, until the sweet potatoes are nearly done.<\/li>\n<li>Remove from heat.<\/li>\n<li>Add green onions.<\/li>\n<li>Prepare some rice.<\/li>\n<li>Serve over rice, garnished with basil leaves.<\/li>\n<\/ol>\n<p>*Note: Ever since having seen Yan (of <a href=\"http:\/\/www.yancancook.com\/\" target=_blank>Yan Can Cook<\/a>) prepare carrots this way, I&#8217;ve done so as well.  Basically, you&#8217;re cutting across the carrot on a 45&deg; angle, and rotating the carrot 1\/4 of a turn after each slice.  This results in chunks of carrot which are wedge-shaped, irregular, and interesting to encounter.\n<\/p><\/blockquote>\n","protected":false},"excerpt":{"rendered":"<p>OK, people: curry.
