So, this is our first shot at revamping <a href=\"https:\/\/hobbitsabroad.com\/?p=2479\" target=_blank>this favorite recipe<\/a>, but using besam (chickpea) flour.  Right at the end we realized that our golden flax seeds have run out, so had to use an egg instead of ground flax (making this merely vegetarian rather than vegan).  Still &#8211; it&#8217;s a recipe we&#8217;ll tinker with, and it&#8217;s quite tasty for a first effort!<\/p>\n<blockquote><p>\n<a href=\"http:\/\/www.flickr.com\/photos\/wishiwerebaking\/6825355019\/\" target=_blank title=\"Besam Zucchini Muffins by wishiwerebaking, on Flickr\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm8.staticflickr.com\/7155\/6825355019_96f00e3281_m.jpg\" width=\"240\" height=\"144\" alt=\"Besam Zucchini Muffins\" align=right hspace=10 ><\/a><\/p>\n<ul>\n<li>1 cup (2 small) zucchini, grated<\/li>\n<li>1.5 cups besam (chickpea) flour<\/li>\n<li>1\/4 cup canola oil<\/li>\n<li>1 cup granulated sugar, plus sugar for sprinkling<\/li>\n<li>2 Tbsp cornstarch<\/li>\n<li>1 large egg<\/li>\n<li>1\/3 cup warm water<\/li>\n<li>1 Tbsp baking powder<\/li>\n<li>1 Tbsp <a href=\"http:\/\/www.flickr.com\/photos\/wishiwerebaking\/537855198\/\" target=_blank>sweet spice blend<\/a><\/li>\n<li>1 tsp ginger powder<\/li>\n<li>1\/2 tsp salt<\/li>\n<\/ul>\n<ol>\n<li>Mix all the stuff together. *<\/li>\n<li>Spoon into a muffin tin.<\/li>\n<li>Sprinkle tops with granulated sugar.<\/li>\n<li>Bake for 25 minutes in a 170&deg;C \/ 325&deg;F oven, rotating once at 15 minutes.<\/li>\n<li>Remove from oven and allow to cool until you can get them to pop out of the muffin tin (10 minutes).<\/li>\n<li>Allow to cool thoroughly and eat slathered in butter or cream cheese.<\/li>\n<\/ol>\n<p>Makes 18 small muffins.  If you&#8217;re making larger muffins (or a loaf), increase baking time to maybe 30-35 minutes for the muffins and 50-55 for the loaf.\n<\/p><\/blockquote>\n<p class=Indent>D. will be taking them into work tomorrow.  We&#8217;ll let you know how they fare, but the couple that we sampled were quite delicious!<\/p>\n<p class=Indent><i>-D &#038; T<\/i><\/p>\n<p class=Indent><small>*Note: We <i>could<\/i> give you instructions for creaming your sugar and oil (and hope that you will), but basically it doesn&#8217;t matter: there&#8217;s no gluten in this, so your dough won&#8217;t ever develop into more of a bread and less of a muffin or quick-bread.
