Here’s one that we forgot. We don’t know why, particularly since it was such a wonderful soup. How does this happen? Is that a silly question, when there are so many other things going on in our lives at any given moment?
Take a butternut squash, peel it, boil it, throw in some coconut creme (or coconut milk) and some pepper flakes, maybe some silken tofu, and blend it all up. There you have it. You might add some vegetable bullion, an onion, some garlic, some ground cumin. That’s that.
I guess that it’s a fairly simple thing to do, and so easy that the making of it is forgettable. The eating of it, though, is not: it’s a wonderful soup.
It is a wonderful soup! I like to add a bit of Thai curry paste to spice it up myself, but yums!
YUM! And the dishes are so pretty. Congrats on the new place, it’s fabulous to have a decent kitchen and I’m sure you two will put it to tasty use!
That open faced sandwich looks good, too. Yummy sounding soup and pretty easy…sometimes thats the best kind of recipe.
I’d love a taste of this soup. I could use it on this rainy Saturday.
